Quell your cravings for this popular Chipotle dish with our copycat Cilantro Lime Rice. All you need is a slow cooker and a little patience ... we promise it's worth it!

  1. Rinse rice 2-3x under cold water until water runs clear. Drain the remaining water.
  2. Add rice to rice cooker along with the bay leaf and 1 tsp salt. Press “cook” button for 20 minutes.
  3. When the rice is done, carefully remove from rice cooker and add to a large bowl. Combine with olive oil + 1 tsp salt. Mix thoroughly and allow to cool for 10 minutes.
  4. Gently mix in cilantro, lemon, and lime juice. Add additional citrus for desired taste.

CHEF TIP: Rinsing the rice will help the kernels separate when cooking and makes for a fluffier rice. Using a rice cooker will help to ensure desired consistency.
