Ingredients
- 2 cups La Preferida Extra Long Grain White Rice
- 2.5 cups water
- 2 tsp salt, separated
- 1 bay leaf
- 1 tbsp. extra virgin olive oil
- 1 tsp lemon juice
- 1 tsp lime juice
- 1/4 cup cilantro, chopped
Method
- Rinse rice 2-3x under cold water until water runs clear. Drain the remaining water.
- Add rice to rice cooker along with the bay leaf and 1 tsp salt. Press “cook” button for 20 minutes.
- When the rice is done, carefully remove from rice cooker and add to a large bowl. Combine with olive oil + 1 tsp salt. Mix thoroughly and allow to cool for 10 minutes.
- Gently mix in cilantro, lemon, and lime juice. Add additional citrus for desired taste.
CHEF TIP: Rinsing the rice will help the kernels separate when cooking and makes for a fluffier rice. Using a rice cooker will help to ensure desired consistency.
