Ingredients
For Pork:
- 3.5–4 lbs boneless pork butt ** ( butt is best option but can sub pork shoulder)
- 2 packets La Preferida Chipotle Seasoning (or Organic Al Pastor Seasoning)
- 2 tsp salt
- 1 cup water
- 2 (15 oz) cans La Preferida Refried Black Beans
- 8 telera or torta rolls
- ¼ bunch fresh cilantro
Optional: sliced tomato, lettuce, La Preferida Sliced Jalapeños
Green Chile Garlic Aioli:
- 2 cups mayo
- 2 Tbsp La Preferida Diced Green Chiles
- 1 garlic clove
- Juice of ½ lime
BBQ Chipotle Sauce: (can substitute with pre-made Chipotle BBQ sauce)
- 1 cup BBQ sauce (sweet style)
- 7 oz La Preferida Chipotles in Adobo
- ½ cup pork cooking liquid
- 1 Tbsp La Preferida Chipotle Seasoning (use leftover packet from pork seasoning)
Method
- Preheat oven to 300°F. Cut pork into two large chunks to reduce cook time.
- Place pork in a baking dish, coat with 1 packet of Chipotle Seasoning + 1 extra tablespoon of seasoning. Sprinkle with salt, and add 1 cup water.
- Cover tightly with a lid, or parchment paper and foil. Chef Tip: Cook pork with the fat side up so it bastes itself.
- Bake for 2–3 hours until the pork shreds easily. Check after 90 minutes and add more water if needed.
- Once cooked, allow the pork to cool slightly in its juices. Shred with two forks. Taste and adjust seasoning. Add a bit of reserved cooking liquid to keep the pork juicy. Reserve ½ cup liquid for the BBQ sauce.
Alternate (Slow Cooker):
- Coat the pork with 1 packet of Chipotle Seasoning + 1 extra tablespoon of seasoning.
- Add 1 cup of liquid (water or broth) to the crockpot. Place pork inside. (Cut pork in half if the pieces are too large.)
- Cook on low for 6 hours. Check for doneness (should shred easily with 2 forks.) If not, cook for another hour.
Make the Sauces:
- BBQ Chipotle Sauce: Blend BBQ sauce, 4 chipotle peppers (5 for more heat), a spoonful of adobo sauce, 1 Tbsp Chipotle Seasoning, and reserved pork liquid until smooth.
- Green Chile Aioli: Blend mayo, 2 Tbsp Diced Green Chiles, garlic, and lime juice until smooth. Adjust lime to taste.
Assemble the Tortas:
- Slice and toast rolls.
- Spread refried beans on the bottom half of the roll.
- Add a layer of aioli, then top with pulled pork.
- Drizzle with chipotle BBQ sauce.
- Layer with lettuce, tomato, cilantro, and optional jalapeños.
- Top with the other half of the roll and serve warm.
