A vibrant vegetarian dish with a Mexican twist! Combining roasted cauliflower with a mixture of creamy greek yogurt and our zesty Al Pastor Taco Seasoning for a little kick.


Shop ingredients 


  1. Preheat oven to 350 degrees F.
  2. Spread olive oil on a baking sheet.
  3. Wash cauliflower head, pat dry.
  4. In a bowl, combine yogurt, seasoning, lime juice, and salt. Mix thoroughly.
  5. Set cauliflower on baking sheet. Spread a thin, even layer of the yogurt mixture on the cauliflower to coat it.
    Tip: Use one hand to coat the cauliflower so you can easily open the oven door.
  6. Place baking sheet in the oven on the middle rack. Bake for 1 hour.
  7. Check for doneness by piercing with a fork. Should feel tender.
