Ingredients
- 4 chicken breasts, boneless, skinless
- 1 tbsp extra virgin olive oil
- 1 pkt La Preferida Organic Taco Seasoning
- 4 buns of choice (ciabatta or panini bread)
- 2 La Preferida Chipotles in Adobo, minced
- 1/2 cup mayonnaise
- 8 slices pepper jack cheese
- 2 avocados
- 1 pkt La Preferida Guacamole Seasoning
Method
- Preheat oven to 400 degrees F.
- In a large bowl, combine chicken, olive oil, and taco seasoning. Place chicken on a lined baking sheet and bake for 15 minutes. Remove from oven and set aside.
- Make guacamole by combining avocados and guacamole seasoning according to package directions.
- For the chipotle mayo, combine mayonnaise and minced chipotle peppers. Add more peppers for added heat.
- When chicken has cooled, slice, and set aside.
- Take 1/2 of your bun (or bread) and spread with chipotle mayo, followed by guacamole. Take a few slices of chicken and place them on top. Add a slice of cheese. Take the other half of the bread and spread with additional chipotle mayo. Gently press the sandwich to compress it.
- In a pan over medium heat, place sandwich down and heat for 1 minute or until lightly crisped. Flip over and repeat with the other side.
- Slice in half and enjoy!
