- 2 red bell peppers
- 2 green bell peppers
- 2 red onions
- 2 green zucchini
- 2 yellow zucchini
- 2 cups mushrooms (18 pieces)
- 2 cups cherry tomatoes (12 pieces)
In a bowl, whisk together marinade. Add salt and pepper to taste.
Cut bell peppers into chunks to yield 12 pieces of each color. Cut onion into chunks to yield 24 pieces. Slice zucchini into thick rounds to yield 12 pieces of each color.
Thread vegetables onto skewers. Place skewers on a baking sheet and brush with olive oil and marinade mixture. Let sit for 10-15 minutes. Reserve left over marinade.
Place skewers on grill for about 10 minutes, turning over occasionally. Brush another coat of marinade while still on the grill. Remove from grill and allow to cool. Use remaining marinade mixture for your choice of protein (steak, chicken, etc.).

Before prepping vegetables, soak skewers in water for one hour before grilling.
