Tired of your usual chicken and rice dinner? Transform your leftover chicken breast into a comforting black bean soup with this quick and easy recipe! A budget-friendly meal that says 'adio's to food waste!

Ingredients
  • 2 chicken breast, cooked 
  • 15oz can La Preferida Black Beans, keep liquid
  • 1 garlic clove, minced
  • 4 tbsp chopped onion
  • 1 tbsp tomato paste
  • ½ cup water
  • ⅛  tsp cumin
  • 1 tbsp olive oil
  • Pinch of salt 
  • Optional: chopped herbs like cilantro, parsley, oregano 
Method
  1. Chop chicken into 1” cubes. (Should make about 1 cup.) Set aside. 
  2. In a small pan over medium heat, add olive oil and chopped onions. Cook 1-2 minutes until translucent. Be careful not burn, lower heat if necessary.
  3. Add garlic and tomato paste – stir for 30 seconds
  4. Add beans, salt, water, and chicken. Simmer for about 5 minutes – be careful not to boil. 
  5. Optional: add chopped herbs like cilantro, parsley or oregano.
