Ingredients
- 2 chicken breast, cooked
- 15oz can La Preferida Black Beans, keep liquid
- 1 garlic clove, minced
- 4 tbsp chopped onion
- 1 tbsp tomato paste
- ½ cup water
- ⅛ tsp cumin
- 1 tbsp olive oil
- Pinch of salt
- Optional: chopped herbs like cilantro, parsley, oregano
Method
- Chop chicken into 1” cubes. (Should make about 1 cup.) Set aside.
- In a small pan over medium heat, add olive oil and chopped onions. Cook 1-2 minutes until translucent. Be careful not burn, lower heat if necessary.
- Add garlic and tomato paste – stir for 30 seconds
- Add beans, salt, water, and chicken. Simmer for about 5 minutes – be careful not to boil.
- Optional: add chopped herbs like cilantro, parsley or oregano.
