Eating healthy has never been so easy — and delicious! Our Turkey Meatballs, served with arroz verde, are super simple, super tasty, and super healthy. With a quick prep time of only 15 minutes, all you have to do is mash up your ground turkey with fresh, healthy ingredients, and throw them in the oven. While those bake, ready your rice and viola!

Method

Preheat oven to 350º

In a large bowl, combine ground turkey, egg, bell pepper, garlic, onion, cilantro, taco seasoning, and panko breadcrumbs — mix well. Take the mixture and roll meatballs to the size of a golf ball. Place meatballs on baking pan and cover with tinfoil — to prevent burning, add ½ cup of water to the pan. Heat meatballs in oven for 20-25 minutes.

While meatballs bake, prepare rice according to package instructions. Once the rice is done, add enchilada sauce and mix well.

When done, remove meatballs from oven and serve with arroz verde. Drizzle with remaining enchilada sauce and top with crumbled queso fresco.
