Did you know-  Fajitas were invented Mexican ranch workers? As part of their payment, they were typically given the less desirable cuts of meat. Traditionally, skirt steak has been used which tends to be quite tough. As a result, the cowboys would add lime to soften the meat and add spices for flavor.

The dish was largely unknown until it was brought to the United States in the 1960s. It was then popularized in Mexican restaurants in the 1990s. Since then, fajita spice mix has evolved into a variety of uses. Some of these include added flavor for dips, a base for chilis, and a grilling rub for meat and vegetables.

how to make fajitas

INGREDIENTSINSTRUCTIONS
  • 1 pkg. La Preferida Fajita Seasoning Mix
  • 1lb sirloin, flank steak or chicken – cut into strips
  • 2 Tbls vegetable or olive oil
  • 1/4 cup water
  • 1 medium onion, sliced thin
  • 1 green bell pepper, sliced
  • 1 small tomato, cut into wedges
  • 8 flour tortillas
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro
  1. In a large skillet, heat 1 Tbls oil; sauté onion and green bell pepper strips, until tender. Remove from skillet and set aside.
  2. In the same skillet, heat 1 Tbls oil; sear the meat.
  3. Add fajita seasoning and 1/4 cup water into skillet with cooked meat, stir well. Bring to a boil and reduce heat to low. Let simmer uncovered 3-5 minutes, stirring occasionally.
  4. Return satutéed vegetables to the skillet to heat; add tomato wedges.
  5. To assemble fajitas, spoon 1/2 cup filling on each tortilla. Top with your favorite La Preferida salsa, sour cream, guacamole or cilantro if desired.
